The chicken variations

Here are three different versions of the recipe below to keep it interesting if you are making this on a regular basis.  Swap out ingredients in the Mexican-style version with the corresponding ingredients in the following ones.

Mexican-style, as below:

  • diced tomatoes with green chili
  • cumin
  • black beans
  • top with scallions and/or cilantro

Mediterranean-style:

  • Italian-style stewed tomatoes
  • oregano and/or rosemary
  • white beans
  • top with parsley

Indian-style:

  • stewed tomatoes
  • curry powder
  • chick peas (garbanzo beans)
  • top with scallions and/or cilantro
